1 tbsp butter
1 tbsp olive oil
1 clove garlic, finely chopped
400g mixed mushrooms, sliced
1/2 cup chopped mixed herbs
salt and pepper
1 sheet store-bought puff pastry
1 egg, mixed with 2 tsp water
4-5 tbsp dried breadcrumbs
Preheat oven to 250C.
Heat a large frying pan over medium heat and melt butter with oil. Add garlic and cook until golden. Add mushrooms and herbs and cook briefly. Season with salt and pepper. Remove and cool. Cut pastry into 5cm squares. Prick pastry with a fork and brush with egg wash, leaving a small border around the edge. Spread about a teaspoon of breadcrumbs over each pastry square, keeping inside the border, then spread mushrooms on top. Bake on a pizza stone for 12-15 minutes or until dark golden.
