Ingredients

  • 4 mint leaves

  • 45mls white rum

  • 80g diced fresh pineapple

  • 4 lychees, peeled and seeded

  • 15ml pineapple juice

  • 15ml lime juice

  • 15ml sugar syrup

  • 1 cup crushed ice

  • pineapple leaves

  • mint sprig

Method

  1. Step 1

    Place the mint, rum, pineapple, lychees, pineapple juice, lime juice and sugar syrup in a blender.

  2. Step 2

    Add the crushed ice and blend until the mixture is the consistency of shaved ice.

  3. Step 3

    Pour into a large chilled cocktail glass and garnish with pineapple leaves and a sprig of mint.
