Ingredients

  • 3 cups water

  • 1 cup sugar

  • 3 cinnamon sticks

  • Juice 1 lemon

  • 4 pears, ripe but firm, peeled (stalks intact)

  • 2 tbsp strong black coffee

  • 150ml cream

  • 1 tbsp caster sugar 

  • Coffee beans, for garnish

Method

    1. Place the water, sugar, cinnamon sticks and lemon juice in a deep saucepan big enough to hold four pears. Bring to the boil, stirring until the sugar is dissolved.
    2. Add the pears, turn the heat down to a gentle simmer, and poach for 15 minutes, or until almost tender. Remove from heat and leave to cool in 
    3. Combine the coffee, cream and sugar. To serve, lift the pears out of the syrup and serve with coffee cream. Garnish with coffee beans.
