Lashings of strawberries and vanilla cream set off this dessert.

Ingredients

  • 5 egg whites

  • 200g caster sugar

  • 200g icing sugar

  • 1 punnet strawberries, hulled and sliced

  • whipped vanilla cream

Method

  1. Preheat oven to 120°C.

    Place egg whites and a few tablespoons of caster sugar in a very clean electric mixer and start whisking on low speed, until mixture begins to foam. Increase speed until mix thickens to form smooth, glossy peaks. Little by little, add remaining caster sugar, mixing to firm peaks. Finally whisk in icing sugar.

    Pipe neat rounds of meringue mix onto an oven tray lined with greaseproof paper and bake for 90 minutes.

    Allow to cool and serve with strawberries and vanilla cream. A lovely addition is to toss strawberries in strawberry coulis and top with crushed meringue.
