Ingredients

  • 185 ml (¾ cup) guava nectar or guava juice

  • 2 tbsp lemon juice

  • 1 medium yellow papaya (about 650g)

  • 310 ml (10¾ fl oz/1¼ cups) pineapple juice

  • 100 ml (3½ fl oz) milk

  • 2 small scoops vanilla ice-cream

  • 1–2 tbsp honey, to taste

Method

  1. Step 1

    Combine the guava nectar or juice and lemon juice. Pour into ice cube trays and freeze until firm.

  2. Step 2

    Peel the papaya and cut it into small cubes. Put the papaya in a blender with the pineapple juice, milk and ice cream and whizz for 25 seconds, or until smooth. Add the honey, to taste, and blend for 15–20 seconds, or until frothy.

  3. Step 3

    Pour the shake into four glasses and divide the guava ice cubes among the glasses.
