Bishop Sessa makes all the right moves, from butchering on site to careful sourcing. Even the herbs on the narrow room's long bar go from plant pot to plate during the evening. Small nuggets of smoked clam, apple cubes and slices of sustainably sourced Patagonian toothfish achieve that splendid combination of delicacy with depth of flavour. A square of watermelon, just like its 'prosciutto' menu description, is pretty as a picture with bite-sized rolls of lettuce-wrapped spanner crab remoulade and heirloom tomatoes, with a curry and crab dressing. Palmers Island mulloway sits on bisque-simmered white beans with chorizo nuggets, while duck breast and sausage comes with a classic orange-y accompaniment of marmalade with onion. A roll of honey iced nougat and green tea jelly completes the meal. There's a wealth of kitchen and service experience in this restaurant, with its line of bar stools and single row of tables, and it comes to the fore in friendly, efficient service and almost flawless flavour combinations.
