To learn why no-bookings Chin Chin is one of the city's hot tickets, turn up before noon for lunch or 6pm sharp for dinner. Stragglers, prepare to wait. The big, monochromatic space has lofty pressed-tin ceilings, a long bar and paste-ups adding a dash of colour. The menu reads like Asia's greatest hits: steamed chicken and corn dumplings, salt-and-pepper crab with green papaya salad, caramelised pork, kingfish sashimi et al. All pack a wallop, with hot, sour, salty and sweet flavours in all the right places. Don't miss the ice-cream sundae with salted honeycomb and mouth-puckering lime syrup. Like many of the dishes, it's dazzling.
