Heading out to a bar is on ice during Melbourne's lockdown, but that doesn't mean Negroni Week is cancelled. This year, bartenders are bottling their takes on the bitter tipple ready for home delivery. So whether you order in or DIY at home, get those oversized ice cube trays into the freezer in readiness.

"The best thing about a negroni is it's not complicated and very easy to remember in terms of ratios as it's simply equal parts vermouth, gin and Campari," says Luke Whearty of Melbourne CBD bar Byrdi. "My hot tip is something I actually recommend for most cocktails and that's salt. Salt goes a long way to lifting the sweetness and lowering the bitterness of drinks and really makes a negroni pop."

Whearty encourages home bartenders to play around with the vermouth as we come into the warmer months. "A classic Italian sweet vermouth is the staple, however a lighter vermouth like some of the newer rosé-style vermouths really goes a long way to lighten up the drink." (He recommends the "juicy and fresh" Cinq a Sept pinor noir vermouth from the Mornington Peninsula.)
