Bills Bondi

There's something very comforting about a breakfast and brunch menu that remains as straight-shooting as this one. Those scrambled eggs are still creamy, the ricotta hot cakes still fluffy and covered in honeycomb butter. Bill Granger pretty much perfected brunch back in the day - why change?

Boon

You may know this sleek Thai eat house for its hot and funky salads and brilliant fruit and veg store off to the side. What you may not know is they also run as a legitimately excellent cafe during the day straddling that divide between Thai street treats and Inner City Sydney coffee culture.

It's the Scando-Japanese cafe we never knew we needed and now we have it, we'll never let it go. Depending on what they've got in the oven, there's a chance all of Liverpool Street will light up with the scent of baking. This is without a doubt one of the best spots for coffee of every persuasion in Sydney. They even sell it batched and bottled.

Sure, there's the ever-present avocado on toast, but don't expect the kitchen to simply "smash" some avo onto crusty bread and add a hefty mark-up. Meet Gerard's version has house-pickled chilli and yuzu-toasted sesame seeds, which gives a citrus-spiked pop to the feta and coriander. You can upsize this with egg and bacon, too.

Holy sweet and savoury waffles, breakfast fans. Not only do these guys bang out an original and wholly tasty menu of breakfast and brunching good times but they also make a mean brew. That's across the board, too, from cold drip to pour over to flat whites, magics and more.

Rabbit Hole

This tea-focused Redfern cafe (also at Barangaroo) features a menu that skips across brunch and lunch, such as the matcha granola brunch bowl with fruit or a tea marbled egg with kimchi, kale and black sesame. There's even topped toast starring lapsang souchong and bacon jam (pictured above).

True enough, this prize Potts Point bistro may have recently switched to an all-vegetarian degustation during dinner service but fans of the flesh won't be disappointed with weekend brunch here which still features, among other things, some of the thickest cut bacon in town. Oh, and that legendary licorice bread is still going strong.
