With a bounty of plant-based venue openings headed to the inner west in 2022, it's Bondi Beach and the opening of Flave today that has the attention of fans of the fast-growing sector.
Flave's executive chef, Scott Findlay, certainly seems to have the credentials to hit the plant-based brief running, having trained under Gordon Ramsay before spending a decade as the private chef to pioneering vegetarian ex-Beatle Sir Paul McCartney, in addition to "flexitarians" Elton John, Beyonce and Madonna.
Flave founders, ex-Zambrero CEO Stuart Cook and his partner, Samantha, were committed meat-eaters until a bacterial infection while on an overseas trip had doctors order Samantha to adopt a plant-based diet.
Her husband switched in support, their trials in finding "nutritious, flavoursome and convenient plant-based dining options" fuelling the Flave concept.
The bright, casual eatery will have an opening menu rich in dishes such as cauliflower steak with "creamy baconnaise", Tokyo bowls and a plant-based take on a cheeseburger.
There are ambitions to take Flave international, so hit up Bondi and see where it's all possibly just beginning.
