Bakery to star restaurants Baker Bleu expands to Caulfield North

It's not uncommon Baker Bleu to have sold out of bread completely by 10am. And with Mike and Mia Russell's two-year-old, 60-square-metre Elsternwick shop already at capacity, they decided it was time to expand.

Opening June 21, Baker Bleu 2.0 is a mammoth 420-square-metre space on Hawthorn Road, Caulfield North. "It was hard to open in a space this big," says Mike, "but this way we won't have to move again."

The former real estate agency has been stripped to take a new eight-tonne oven, proving cabinets and shelving.

Increased production means more of their dark-crusted sourdough loaves, baguettes and bagels for the public, but the Russells will also take on more wholesale customers.

Fine dining restaurants such as Attica, Cutler & Co, Di Stasio and the Carlton Wine Room are already clients, but plenty are on the waitlist.

The Russells also plan to serve Market Lane filter coffee, and eventually introduce items such as sourdough croissants.

The original Elsternwick store will continue to trade until late September.
