Bedouin restaurant opens in Double Bay this week and its chef has already wandered off into the culinary desert.

He hasn't literally legged it – rather Damien Morley has decided to stay put in the Southern Highlands and focus on Bowral's Grand Bistro, which he originally hoped to juggle with Bedouin.

His replacement isn't too shabby, with Peter Lew, of Fei Jai, now joining Julian Tobias and Eric Jury as a partner in the Double Bay eatery, which is sliding into the former home of Pink Salt.

Lew says its modern "but still traditional" Lebanese menu will kick off this week, but move up a notch in the new year when they announce the signing of a head chef who currently runs the kitchen at a celebrated Sydney restaurant.

In the meantime, diners can snack on the Lebanese dishes and feast on the Steel & Stitch interior.

Open Tue-Thu & Sun 5-11pm; Fri-Sat 5pm-3am (lunches start in 2019).
