What do you get when you mix a humble chicken shop with a fine-dining chef? Former Becasse chef-owner Justin North's JD's Chicken Co, which has just opened in Noosaville with plans for a Sydney launch.

"We take chicken skin, dehydrate it and make our own chicken salt," North tells Good Food about the level of detail he's bringing to the chicken genre.

They are making potato puree from scratch, and brine the chickens, which are 1.6 kilograms – larger than you find in most chicken shops.

"There are a lot of chicken concepts out there – what's missing is quality," North says of JD's, which he has opened with David Singer from Brasserie Wines.

"We have spent the last five years researching and exploring concepts to reimagine the traditional chicken shop. We wanted to create something that was centred around the traditional French rotisserie but with a contemporary twist.

"Both of us have been coming to Noosa for 20 years. We thought it was a great place to open. We'd love to do one in Sydney and it is something you can replicate, but for the moment our complete focus is on the store."

Open Wed-Sun 11am-7pm.
