Hospitality group Applejack breathes life back into Surry Hills pub Forrester's

With The Butler, The Botanist and SoCal just a few of the thoroughbreds in its stable, Applejack Hospitality has populated Sydney with quirky venues.

On Tuesday, it will open the doors on Forrester's, its most ambitious venue yet.

A big part of its Applejack's success has been championing the idea of a one-stop-shop, where diners can slide into a venue within a venue for a cocktail or a drink after a meal. "We also like to inject a bit of fun," says Applejack co-owner Ben Carroll.

But where most of its venues are former restaurant sites, its latest opening is a slightly faded Surry Hills pub, previously known as The Forresters Hotel.

"We've tried to embrace the pub but also bring something new," says Carroll. "We think of it as The Butler and SoCal's love child.

"It has Phylli's restaurant, a traditional public bar, and upstairs we'll be doing comedy and trivia. It's pretty quirky. Hopefully it adds something different to Surry Hills."
