Hospitality veterans to reopen Bilpin's Apple Bar

 Expect a little extra traffic crossing the Blue Mountains on the Bells Line of Road in coming months, because Bilpin is about to get a detour-worthy injection of restaurant talent.

Michael "Manoo" Robertson, the personal and business partner of Sean's Panaroma chef Sean Moran, has teamed up with former Sean's chef Sam Hardinge to snap up the Apple Bar (Robertson and Moran have a farm nearby).

The New Apple Bar will open on Friday. "Manoo and I have gone halves in it," Hardinge says. "It closed late last year. It's a great spot. We've given the room a freshen up." .

The personable Robertson will work the bar, and Hardinge will slide behind the wood oven in the Bilpin venue first put on the map by restaurateur Michael Jaggard.

Hardinge, who had a stint at the restaurant during Jaggard's tenure, wants to punch out pizzas as well as wood-fired steak and fish. It's a promising, Vulcans-like addition to the route.
