Merivale's new Euro bistro Bert's opens at the Newport

Well, hello Bert. Merivale's latest restaurant love child, Bert's, opened on Sunday in Newport, just in time for diners to catch the midsummer sunsets over Pittwater.

It might be tucked into The Newport, but this is no cookie cutter pub restaurant. Siberian caviar and blinis? No problem. Wine list of 750 bottles? Check. Luxe Hemmes fitout with serious input from Akin Creative's Kelvin Ho and stylist Amanda Talbot? Triple tick.

With inspiration from 1930s grand hotel dining rooms, Bert's coastal European menu is also out of step with the standard Aussie beachside formula.

"We want to create that sense of relaxed indulgence you experience on a coastal European holiday; to capture the feeling when you decide to order the fresh lobster or relax into the afternoon with champagne and oysters", says Bert's executive chef, Jordan Toft.

This is Sydney, so the menu signature, Avocado Bert, takes the city's go-to ingredient, avocado, and places it in a chorus line of chopped egg, tarragon, chive, chervil and togarashi.

Mains include pork rib with peach glaze and garlic flowers and a basque-style baked crab.

The name Bert never sounded so good.
