Pizza-free pasta joint Elva joins the Bondi Road party

Natural wine bar and restaurant, Ode, recently opened to good reviews while Justin Hemmes splashed a reported $30 million on the nearby Royal Hotel, but they'll be joined by another new operator this week on the bubbling lower blocks of Bondi Road.

"Yes, we're opening Thursday," says restauranteur Nick Gilbert, who has nabbed 277 Bondi Road, where feverish building work has been taking place in recent weeks.

Gilbert, who owns Vacanza Pizzeria, is opening Elva at the site, but the new venture will be pizza-free and is a partnership start-up with another restaurateur.

"It is joint project between myself and Michael Stevens from Baccomatto Osteria. The executive chef is Valerio Boncompagni, from Baccomatto, so you can expect authentic handmade pasta with an emphasis on fresh local produce," Gilbert says.

Elva gets its name from Bondi local Elva Tesoriero, part of the family that ran a fruit shop at the site in the 1950s.

"Being a Bondi local myself, the concept is to bring an inner-city Sydney feel to the Bondi Road strip. We've transformed the interior with a leather banquet, marble bar and feature lighting to provide a relaxed, warm and unpretentious atmosphere," Gilbert says.

Open Mon-Fri dinner; Sat-Sun Lunch and dinner.
