White Rabbit serves signature pomme puree at new Double Bay venue

Chin Chin has one, there's an art gallery in Chippendale named after them, and now Double Bay can lay claim to its own. Rabbits. They're rapidly multiplying across Sydney.

Chin Chin's signature neon rabbit has even more company in the Harbour City after the launch this week of White Rabbit Double Bay and its floppy-eared mascot.

"I came up with it about three years ago – I was looking for a name and saw a rabbit logo," says Steven Fadda, co-owner of White Rabbit Sydney, which has just spawned an offspring on Bay Street in Double Bay.

Its signature Rabbit hole pomme puree (mash, coddled eggs, chives and a charred baguette) is on the menu at Double Bay. "It's our version of egg and soldiers," Fadda says.

The chef says his pitch is a fine-dining version of cafe food. They use Pepe Saya butter and make their tortellini from scratch, serving it with brown butter and king prawns.

"The rabbit is perfect, we're all about Alice in Wonderland," he says.

Open daily 7am-2.30pm (coffee until 4pm).
