Yum cha on the menu as Madam Chu's rolls into Bondi

If chocolate spring rolls with Bondi views gets your pulse racing, we have just the ticket for you. Madam Chu's has opened its doors at the Pacific development on Campbell Parade, and the cocktail bar-food venue will offer a yum cha trolley service.

"We're got an ex-Mr Wong dumpling chef, so Thursday to Sunday we'll send out trolleys full of shrimp rice rolls, gow gees and Buddha dumplings," says owner Emma Morris.

Morris, who also owns Vue Bar up the road, swooped on the former site of Isabel after it and neighbour Panama House closed last year. (The word on Bondi eats streets is the latter will become an Italian restaurant.)

"We've managed to get the courtyard as well, so we've really increased capacity," she says.

Morris, who also owns Don Pedros in Paddington, says she wasn't tempted to transplant it to Bondi.

"I'm a Bondi person, I could point in any direction here and I could spot a Mexican [restaurant]," she says.

But she has spotted a gap for Mexican food elsewhere. Morris will open a Don Pedros outpost in April after securing a site at Byron Bay. "It's a baby version," she says.

Her arrival in the beachside town will add to the growing collection of Sydney operators launching there, with Maurice Terzini the latest to announce he'll open at the northern NSW hotspot.
