Franklin chef Analiese Gregory joins guest line-up at The Dolphin in Surry Hills

The Dolphin Hotel has announced the line-up for its Aperitivo Hour guest series for 2018 – and it's good news for fans of Analiese Gregory.

The former Bar Brose chef takes over happy hour in the Surry Hills pub's Wine Room on April 1.

She'll be joined by wine importer Andrew Guard and will likely do a snacks menu based on Tasmanian seafood – a nice tie-in to the fact she's currently based in Hobart as head chef of Franklin.

But her Bar Brose classics might get a revival. "[I'm] toying with the idea of bringing the gougere back for one night only!" she says.
