Banksii Vermouth Bar & Bistro to close at the end of May

Rebecca Lines and Hamish Ingham's Banksii Vermouth Bar & Bistro will shut at the end of May, after nearly five years of trading.

It won't be the end of their association with the Barangaroo site, however.

The duo are set to join Sydney's Mexican wave, with plans to open Tequila Daisy in the Banksii space.

"Banksii has enabled us to invite Sydneysiders to ... develop an understanding and appreciation of the aromatic flavours of vermouth," says Lines, co-founder and sommelier of Banksii.

"The last 12 months have given us the freedom to experiment and explore our obsession with Mexican-inspired flavours. We're excited to be able to share what we've been working on with the opening of Tequila Daisy in August."

In addition to his role at Barangaroo, Ingham was recently appointed as group general manager at Lotus Dining Group. His first new cab off the rank was Lotus Double Bay, which opened in November serving a menu described as "authentic Shanghainese dishes with a twist".
