Barangaroo's Ete set for new direction

When it opened last December, Ete was one of the last of the big restaurant openings at Barangaroo.

But is Ete's French food revival over following the departure last week of chef-owner Drew Bolton?

"I've sold my stake to my business partner Abikesh Abikesh. Because Ete is heavily built around me, they'll rebrand it and it'll get a menu change," Bolton tells Good Food.

Will it retain its Frenchness? "I've got no idea," Bolton says.

The restaurant battled with delays but became the first French restaurant to try its luck at Barangaroo.

The personable and talented Bolton isn't done with the restaurant caper.

He'll continue to operate his successful catering company, and wants to pursue his dream of eventually opening a restaurant closer to his childhood stomping ground, at the base of the Blue Mountains in Kurrajong.
