Beaconsfield's busy Bertoncello brothers are bracing for a whole lot of DIY, repurposing and sandpaper as they transform the neighbouring 1878 former post office into the new home of O.My.

Working on a tight budget, Chayse Bertoncello and his brother, chef Blayne, have roped in their carpenter brother, Clay, to help them transform the Beaconsfield landmark into a dual-purpose dining room and long-promised bar.

Locals have been telling them since they opened their two-hatted garden-to-plate restaurant in 2015 that they wanted somewhere they can pop into for a glass of wine. After looking for a site for six years, the Bertoncellos spotted the neighbouring property up for lease.

Since signing on, they've spent a few days assessing the new premises and are delighted by high and ornate plaster ceilings, and fireplaces, but nonplussed by "5000 coffee cups and saucers, none of which match", left by the previous cafe tenants.

Stage one will be to create a small bar in the front room, accommodating 20 to 25, which they'll open in mid-May. It will serve snacks from the current degustation menu, plus house-cured smallgoods such as venison prosciutto.

By late June or early July, they intend to open a restaurant with better sight-lines, bigger tables, more room and more light and greenery than in the current premises. It will seat up to 28, the numbers driven by what they can grow in the family's kitchen garden.

O.My Bar, at 19-21 Wood Street, Beaconsfield, is set to open in May, with the dining room to follow by early July.
