If you've bean wondering what vegie and vegan dishes are available at the Brisbane Night Noodle Markets, don't get cornfused, we've created a list of our favourite plant-based dishes from tofu bao to teriyaki noodles and vegan ramen to cheesy corn cobs.

Bangkok noodle from Bangkok Street Food

If you're en-Thai-rely eating a vegetarian diet, try the house speciality, Bangkok Noodle, rice noodles stir-fried with eggs, chopped tofu, tamarind pulp and topped with roasted peanuts. They also have vegan spring rolls on the menu.

3ZY Duz it from Bao Brothers Lil Diner

Bao Brothers Lil Diner is basically a one-stop vegan and vegetarian shop. Let's break this one down: 3ZY Duz it is three tofu bao (which can be made vegan on request). These bros specialise in Taiwanese steamed buns, gua bao, but you'll also find vegie-friendly fully loaded sweet potato fries.

Osaka noodles and gyoza from Donburi Station

The vegetarian Osaka noodles from Donburi Station are here to satisfy all your teriyaki noodle cravings. There's dumpling else you should know – there are Japanese fried dumplings (gyoza) on the menu, too.

Vegetable yakisoba from Little Kyoto

You can't visit the Night Noodle Markets without trying a bowl of noodles. The Yakisoba from Little Kyoto is a must-try – it's packed full of veggies and tossed with a traditional Japanese sauce.

Inihaw na Mais and Kanin from Hoy Pinoy

Hoy Pinoy, the BBQ grill masters, bring you two vegetarian delights. Inihaw na Mais (grilled corn, cheese glaze, kornik) – think old-school grilled corn cob, drizzled in a creamy cheese sauce. Kanin (steamed rice topped with green papaya pickle) is a versatile steamed rice dish served with atchara. It's a great side to accompany just about any Night Noodle Markets meal.

Wakame noodles with pickled and fermented vegetables from Chu the Phat

Wakame me up before you go-go! Chu the Phat's wakame (seaweed) and wheat flour noodles are handmade daily. They toss in seasonal vegetables, some fermented and pickled, and others served raw for crunch. They then add a light miso broth for extra flavour. Wham! That's some tasty umami flavour right there.

Assorted noodle dishes from May's Malaysian

Every item on the May's Malaysian menu can be made vegetarian or vegan-friendly including vegan mee goreng, nasi goreng, char kway teow, vegetarian fried radish cake and Singapore noodles.

Tofu Karaage Noodle from Raijin

Just like the '90s sitcom, everybody loves ramen. And today, vegans can join the fun, too. At Rajin, noodles are dressed with a tahini-based ramen sauce and topped with crunchy tofu, seaweed, corn, sunflower seeds, sesame, pickled ginger and fried shallots.

Paella Bali (vegan yellow curry) from Fusion Paella & Tapas

Take your tastebuds to everyone's favourite holiday playground, Bali, wth this earthy and warmly spiced mash-up of turmeric, galangal and peanut satay with tofu, pumpkin, charred green beans and brown rice.

Roti dippers and vegetable roti roll from Roll up

Roll up, roll up. Roll Up will be bringing their flatbread delights to the Night Noodle Markets for you to devour. Dip your roti into satay sauce or try the vegetable roti roll – fluffy, flaky pastry wrapped around tofu, mixed salad and that same home-made peanut sauce. It's complete satay-sfaction!

Vegan Zen, red bean bun and edamame from Steamed

If you're vegan, vegetarian, flexitarian, or just a straight-up carnivore that needs some green goodness, head straight on over to Steamed. The 'Vegan zen' is a selection of vegetarian dumplings. Or grab some red bean buns or steamed edamame as a snack.

Yakisoba from Teppanyaki Noodles

The Japanese-style fried noodles make another appearance. Smokey, silky noodles are swished around a piping-hot wok, coated in Yakisoba sauce, and finished with a pickled ginger and a squiggle of mayo.

Okonomiyaki from Okonomiyaki

Okonomiyaki is a Japanese savoury pancake and at the Night Noodle Markets, you'll find a cracking veggie version layered with all the colourful goods and drizzled with a plaid of sticky sauce and mayonnaise.

Stir-fried thick rice noodles from Wok Master

Like we said earlier, you just can't visit the Night Noodle Markets without digging into some noodles. Wok Master's vego version stars thick rice noodles stir-fried with veggies and egg in a special ABC soy sauce.

Fried tofu gua bao and choi bao from Wonderbao

Well, its a-bao-t time we got to Wonderbao and their fluffy buns. The tofu gua bao is filled with tofu, pickled daikon and nori, then covered in okonomiyaki sauce, while the choi bao is stuffed with shiitake mushrooms, tofu and veggies.
