Bets being taken on the culinary field at Barangaroo's Crown casino

Many fans of Crown's incoming casino at Barangaroo clearly like a wager, and it's an almost sure bet that its food offering will include an Italian restaurant from two-hatted chef Alessandro Pavoni​.

For years developers and restaurant backers have tried to lure Pavoni south from his northern Sydney stronghold, where he has nurtured the twin hatted Ormeggio at the Spit and other projects.

"At the moment I can't talk about anything," Pavoni told Good Food, but word is the James Packer-led casino has got its man.

Who else will open there? As previously reported, Ross and Sunny Lusted from recently closed city fine diner the Bridge Room are also strongly tipped to be headed in.

And what of the other food staples at Crown Resorts? Chef Guillaume Brahimi is sure be involved in some form, and Neil Perry's Rockpool Bar & Grill and Rosetta are unlikely given they are already represented in the Sydney CBD.

After Crown Resorts forked out $141 million in 2015 for a 20 per cent stake in restaurant high-flyer Nobu and a seat at the table with fellow investor Robert De Niro, Nobu must be a surer thing than Winx over 1600 metres to open at Baranagaroo.
