Bistecca owners to launch new city venue

The creative duo behind northern CBD hit restaurant Bistecca has nabbed a new site on King Street where they'll open a new meat-based concept.

Warren Burns and James Bradey, part of the Liquid & Larder group, have been playing to packed houses since opening Bistecca last year.

It's a singularly directed venue where you enter through a backstreet bar and order from a menu focused on a single cut.

A good choice for the indecisive, Burns and Bradey have also been successful in playing parent, parting Sydneysiders from their mobile phones on entry.

They've also kick-started a trend for bread you dip into edible candles.

The subterranean former site of Subsolo is even more food famous as the site of Peter Conistis' Omega Restaurant.

Burns tells Good Food the new venue won't be a facsimile of any of the group's current venues, which include Bistecca, Grandma's Bar and Wild Rover.

There's talk within the group it might follow Bistecca's meat theme, but this time with more than one cut on offer.
