Bondi's Blanca restaurant opens burger and ramen pop-up

Sydney isn't short of Japanese-inspired burgers (say hi Gojima and Ume Burger).

Now Bondi's Blanca restaurant is joining the party with burgers flouting Japanese and Korean credentials.

Fancy a little kimchi and miso mayonnaise on your wagyu burger? Blanca, co-owned by Finnish celebrity chef Tomi Bjorck and fellow chef Samuel Cole (ex Quay, Bentley and Bjorck's BW Restaurants group in Helsinki), has kick-started a burger and ramen pop-up in its neighbouring bar.

"We'll do it through winter, then change it to something else to keep it interesting," Cole says.

"We've tested a lot of burgers and ramen, the kitchen staff are going to get fat."

And the staff votes went to? "Probably the vegie burger. It's a miso roasted tempura mushroom burger with chopped Japanese pickles and miso mayo," Cole says.

Open Wed-Sat 4pm-late.
