Bowral's Biota Dining to open Sydney spin-off in Chippendale

Bowral's two-hat Biota Dining is heading to the big smoke, opening a city spin-off in Chippendale mid-year.

Biota's owner-chef, James Viles, confirmed he'll open Biota Chippendale in June in the space previously occupied by Silvereye restaurant, but he won't be drawn on yet-to-be finalised details such as its length of tenure.

The ambitious Silvereye closed mid-2016, with the fine-dining restaurant above the Old Clare Hotel failing to land a long-term tenant for the site since, despite a number of high-profile operators touring the venue.

The space has housed a successful shorter-term operation, Clayton Wells's brunch venue Auto.lab, and Biota is most likely to follow that model without being a traditional pop-up.

Those who've seen the plans say it'll be more casual than the Bowral Biota - fun and loud with other high-profile Sydney chefs possibly involved with the project. It's one to watch, so mark it down in the diary.
