British chef Paul Wilson has left Wilson & Market, the multipurpose tuckshop, bar and restaurant he opened at Prahran Market a year ago.
Wilson says he is unable to comment for legal reasons and that a statement will be released shortly.
Food and beverage manager Ryan Butler says it's "currently business as usual" at the South Yarra restaurant.
The project, first mooted in late 2015, was tipped to open by April 2016. But it was beset by problems, including a name change (from Wilson & Merchant) and construction delays.
The centrepiece, a 110-seat brasserie, opened in June 2017 and the final piece in the puzzle, a streetside terrace, launched in October 2017.
After rattling the pans at restaurants such as the Botanical Hotel, Radii and Icebergs Dining Room and Bar, Wilson spent several years as a hospitality Mr Fix It, developing an interest in Mexican food and writing two cookbooks, Taqueria and Cantina: Recipes from a Mexican Kitchen.
Wilson & Market was the first restaurant he owned.
"I've been a rolling stone for a long time and I'm ready to call somewhere home and contribute to the community with a great restaurant," he said when first announcing the project in 2015.
