The fine-dining chef who kick-started Sydney's burger craze is putting his money behind what he hopes will be the city's next food trend: Hawaiian poke. Chur Burger owner Warren Turnbull plans to open a restaurant focused on the raw fish concept this year at Bondi Beach, the first of hopefully several venues.

The Japanese-influenced Hawaiian dish, traditionally served chopped and tossed with seaweed and ground candlenuts, has found a new voice in Los Angeles at places such as Sweetfin Poke in Santa Monica. Turnbull had been spotted touring the new Pacific development on Campbell Parade, but says he put that on hold after discovering he and his partner are having a child.

"I still want to do it in Bondi, but it'll be more around Hall Street," he says. "It's perfect for down by the beach."
