Chinese 'sushi train' brings 'Chiko' spring roll to Bondi

The humble sushi train is finally starting to lug more varied food freight.

Adriano Zumbo tried to include desserts in its haulage, and last month a London start-up put cheese and charcuterie on the tracks.

In recent days, Chinese classics have started circling at Bondi Beach.

"We thought the idea of grabbing a plate of white asparagus with XO, some wagyu and a good glass of wine [would have appeal]," China Diner co-owner Kingsley Smith says of his newly installed China Train.

"It lets people who are in a rush come in for a quick bite. We've also found younger customers bounce around from venue to venue, so it gives us more flexibility. They might have a dish and a cocktail."

Smith says there is still an expectation of some Japanese food, so he has employed a new team to service the tracks.

"We're aiming for 50-50 Chinese-Japanese food on the train," Smith says.

The restaurateur also promises only one of the Japanese dishes has mayo on it (toot-toot from us).

You'll also find a "Chiko" spring roll on the rolling stock, but don't expect the cabbage and beef Aussie corner-store staple.

"It is a chicken roll. It's our bestseller."
