Two decades after Fratelli Paradiso swung open its doors, co-owner Marco Ambrosino has departed the Potts Point stalwart.
Ambrosino announced on social media he is now no longer involved at Fratelli or its spin-off, 10 William St.
"I am grateful for my 20-year sojourn [with his partners] Enrico and Giovanni Paradiso," he says.
Ambrosino didn't give any reason for his exit, but has been increasingly active outside the business, teaming up with restaurateur Manny Spinola to open Bondi's Lola's Level 1 late last year.
The pair will open a second venue, Manon, at the QVB Building in the CBD in the coming months.
Ambrosino's departure from Potts Point isn't the only change of personnel in the glitzy postcode. British chef Alastair Little has stepped out of the kitchen at Et Al.
"While not quite ready for retirement, he has decided to finish up at Et Al and pursue other endeavours that do not require the long, unforgiving hours of running your own restaurant," co-owner Stephen Craig told Good Food.
"We'd like to thank Alastair for captaining the 'Et Al ship' through the last two difficult COVID-affected years, for taking everything we've thrown at him in his stride."
Et Al's new head chef has an impressive CV. Apolline Tomasevic had stints with Alain Ducasse before moving to Australia, where she has worked at Monopole and Nel.
