Damien Pignolet heads back to be ambassador for Bistro Moncur

Damien Pignolet and Bistro Moncur just can't stay apart. The veteran chef is back working at the restaurant he opened in 1993, a move he likens to returning home.

Pignolet was a co-owner in The Woollahra Hotel [home to Bistro Moncur], which was sold in 2011 following the death of Pignolet's business partner Ron White.

"I came back to work on the 25th anniversary dinner and they offered me an ambassador role. I'll be in there, and helping the team," he says.

Chef Guillaume Brahimi previously held a consultancy role with the restaurant, a spokeswoman for the restaurant confirming the Frenchman's gig finished at the end of 2017.

Pignolet says it was heartening to return to the restaurant and find the kitchen still using his recipes.

He'll work with the head chef on some other dishes, so keep an eye out for more trout and offal.
