Medical doctor and expansive CBD restaurateur Sam Prince insists he's still undecided what he'll open in the Bridge Street site he's snared in the Sydney CBD, but insists it'll open in spring. Clock's ticking.

But Prince has more decisive news around the corner at his INDU restaurant, where he's signed English chef James Wallis, who has a promising CV and a professional brush of the good type with Gordon Ramsay.

"A lot of our early adopters at INDU have been British expats … James is really bringing a new edge, putting squid ink hoppers and putting crab in betel leaf on the menu."
