Among all the outcry about what's no longer available to snack on at the footy, the big question about what you will be able to eat at the MCG this AFL season has gone unanswered.

Good Food spoke to chef Guy Grossi to find out what's cooking.

Grossi will be overseeing the food in the ground's Committee Room, transforming it into what he describes as a sophisticated yet relaxed space with strong European influences.

Confirmed dishes include his famed parmesan-crusted lamb shoulder, wagyu bresaola with accompaniments and a champagne trolley at the start of the meal. Specials might include veal saltimbocca or tagliolini alle vongole.

In a major change the dining room, previously only open to Melbourne Cricket Club members, can be enjoyed by the general public for mid-week lunches, with Grossi serving an a la carte menu of "good food from good provenance: simple, well-executed".

"You could be eating at a great restaurant in Europe, but you turn around and go, 'Oh my god, we're in Melbourne," says the chef, describing the room's views of the hallowed turf.

On game days, the style and quality of the food will be consistent with Grossi's a la carte menus and the pace will be quicker.

While Grossi-designed menus will be available for events and functions, the chef has nothing to do with snacks around the rest of the ground, despite the misunderstanding that footy staples such as hot chips and pies were being replaced by fine-dining.

The other big name in the all-local line-up is chef Alejandro Saravia, creator of CBD restaurant Farmer's Daughters, which celebrates Gippsland produce, and the soon-to-open Victoria, which will do the same for other Victorian regions. Saravia will be in charge of menus in The Long Room, which remains an MCC-only zone.

Meanwhile, out in the stands, Melbourne's own SPQR Pizza, Royal Stacks burgers and Gami's Korean fried chicken will move into some of the food outlets. SPQR's David Mackintosh says pepperoni and the pinepple-topped tropicale are among the options, all served in a convenient seven-inch size.

"One might say you could hold a slice in one hand and a cold beverage in the other and shout advice at the umpire."

The Committee Room by Guy Grossi is open for lunch from Thursday, March 10. Book at mcg.org.au/grossi
