The Australian food invasion of London has been noticeably quiet in recent times, but is poised to step up its game with former Sake chef Shaun Presland set to open in the British capital. Presland has been openly looking for sites in London for the past 12 months. And the talented chef, who worked everywhere from Nobu to Sushi e, confirmed he's nabbed a site on Lower James Street in Soho. "It'll be called Pacific," he says. Presland earned a loyal local following in London back in 2017 when he temporarily took over the kitchen at the Tate Modern. But he'll be under no illusions about how tough the restaurant market in a country living under the cloud of Brexit. Pacific will replace a restaurant currently at the site which closed after just two years.
