Restaurateur Con Christopoulos and his Gills Diner business partner, chef Chris Kerr, have welcomed three new partners into the business, and introduced an Italian menu to replace the broadly European one of times past.
Chefs Luca Flammia and Francesco Rota, formerly at Tea Rooms of Yarck, along with front-of-house manager Matteo Neviani, who ran the floor at South Yarra's Da Noi for eight years, are bringing flavours from the Emilia-Romagna region of northern Italy to the Gills Alley restaurant off Little Collins Street.
There's technique and skill in dishes such as quail saltimbocca on sweet garlic cream, plus simple pastas and hearty meat dishes to keep the regulars happy. An identity shift is also planned, including a refurb and a name change – which Christopoulos says is still to be confirmed.
Gills is open Monday to Saturday for lunch and dinner.
