Icebergs recruits Nic Wong, and other Sydney chef shuffles

Sydney's chef shuffle is reaching pre-Christmas warp speed, with Jesse McTavish stepping away from Dunes.

The revamped Palm Beach eatery recently received a good review from Terry Durack.

McTavish, who also attracted good press at North Bondi Fish, told Good Food his immediate plans include overseas consultancy.

With Monty Koludrovic announcing he'll leave Icebergs Group at the end of the year, Sydney's eat streets have been humming with rumours the chef's next move will be to Los Angeles to work on a new project from the team behind E.P. & L.P. despite Koludrovic saying he wants a sabbatical and has nothing locked in.

Icebergs Group has been active in restocking talent, signing Nic Wong (Cho Cho San, Orana pop-up) to focus on "talent and operational development".

And on the northside, former Bistro Guillaume head chef Jeremy Pace has joined Frenchies Brasserie at Elanora Heights.

Current head chef Fabian Oliveau is relocating to Noosaville, where Frenchies will open a branch in early December.
