Having spent last summer cooking rotisserie chickens with an ocean view, Stuart Brookshaw and Ruth Giffney (ex-Albert St Food & Wine) are opening a CBD hen house, Henrietta's Chicken Shop & Bar.
A grown-up version of the Aussie chicken shop, Henrietta's specialises in free-range, rare and heritage-breed chooks such as Milawa. Using a 12-hour injection brine method and "familiar" rubs (think oregano, pepper and lemon), the chickens are slow-cooked over sustainable charcoal before being quartered, halved or served whole with a selection of sides.
An eight-salad rotation includes favourites from their Albert Street days, including slaw and ancient grain salad, many using indigenous ingredients, such as Grampians bush tomatoes. .
The drinks list includes a range of small, sustainable Victorian wine producers and independent local brewers, along with a quirky range of cocktails such as an Antipodes gin and Capi tonic slushie, and lemon myrtle iced tea.
Finish with eucalyptus-smoked soft serve with choc-mint sauce or house-made fruit tingle dixie cup ice-cream.
Their new digs, off Flinders Lane, take inspiration from their Queenscliff pop-up space, with recycled timber throughout, a bar made from 100-year-old blackbutt, and pendant lights made from repurposed farm fencing.
