Brisbane, meet Mister Fitz. The retro ice-cream parlour recently opened in two locations: Fortitude Valley (December 17) and South Bank (December 24).

Build-your-own ice-cream cookie sandwiches ($7) are Mister Fitz's main attraction – first choose your cookies, select your ice-cream flavour, and hand-pick toppings, drizzles and add-ons ($1 each). Milkshakes ($10.50), waffle cones and soft-serve are also available. Mister Fitz bakes its cookies and churns its ice-cream in-house.

Scoops include Hypnotize (bacon, banana and brown sugar), Going To Miami (passionfruit mojito), Def Jam (peanut butter and jelly), No Diggity (Nutella), and More Bounce to the Ounce (milk and cookies).

The 1950s-style ice-cream parlours are the latest venture for Damian Griffiths (Doughnut Time, Les Bubbles, Kwan Brothers). With retro pastel interiors, the Mister Fitz stores will take you to old-school ice-cream heaven.

One of Mister Fitz's more intriguing offerings was inspired by bacon-loving Parks & Recreation character Ron Swanson; a combo of vanilla ice-cream topped with french fries and maple bacon.

Mister Fitz - represented by a fictional dog mascot - is gaining quite a fan base, with Fitz's Facebook and Instagram accounts amassing 5000 followers.
