Searching for something new for Valentine's Day? They don't come any fresher out of the oven than Luke's Kitchen at Kimpton Margot Sydney, which opens its doors tonight (Monday, February 14).

When Luke's Kitchen closed in Waterloo last year, the restaurants' owner, chef Luke Mangan, promised he would rebirth it elsewhere. Good to his word, he's taken it to the city, a few blocks away from the restaurant where he pushed into the CBD with Glass.

The Kimpton Margot hotel slides into the space where the Primus Hotel previously operated from 2016. While the Primus' restaurant, The Wilmot, never really etched itself on the Sydney dining scene, the space it occupied, the 1930s home of the Sydney Water Board HQ, has great bones.

A hotel lobby restaurant and art deco surrounds are matched with a menu that stretches from spanner crab salad to a signature dish of dry-aged Wollemi duck served with a fragrant Indonesian-style curry with crisp skin and a creamy coconut sauce and Asian spices.

"A fusion of Asian, European and modern Australian cuisines influence the menu which is structured so that guests can enjoy all-day dining," a statement from the restaurant says.

And there's more on the way. The hotel's rooftop and pool area are getting an additional venue, with the word that Michael McCann (Felix, Mr. Wong) is attached to the project.

A spokeswoman for the hotel confirmed a late 2022 opening date for the rooftop venue. "[It'll be] a Kimpton Margot space with Luke Mangan food," she says.

Opening night: Valentine's dinner, Monday, February 14.
