Dirty Italian Disco spin-off Totti's opening at The Royal in Bondi

Yes, he's back. Last month Good Food reported that Pinbone's Mike Eggert was headed to Merivale's newly acquired Bondi pub, The Royal, to reboot his Dirty Italian Disco concept.

It is happening and even better, it'll be a permanent restaurant rather than a pop-up. The name? Totti's.

Eggert will team with ex-Rockpool chef Khan Danis at the Mediterranean 185-seat restaurant, which opens next month.

"The food is an evolution of Eggert's Dirty Italian Disco pop-up that won over the hearts and taste buds of Sydneysiders at the Tennyson last year," a Merivale spokeswoman says.

Eggert and Danis are a delicious dream team, and the menu will play to their strengths.

There'll be hand-made pasta, quirky Italian sides and Danis at the wood-fired oven cooking protein.

"We want it to feel really communal, where people see a table full of little plates and fresh, steaming bread, and immediately want to tuck in and have fun," Eggert says.
