In a brazen move that runs counter to the Australia-wide COVID contraction of the restaurant industry, the Bentley boys are driving Monopole out of its Potts Point showroom and parking it in the city.

Hurrah to that. As well as reopening Monopole on Hunter Street in October, Bentley Group owners Brent Savage and Nick Hildebrandt will open a new, yet-to-be disclosed food concept at Monopole's Macleay Street site in November.

"We always wanted to move Monopole to the city. The support from our customers since we've started to reopen our venues has been amazing, so we are pushing on," says Savage.

The new city location – part of which faces Ryan's Bar at Australia Square – will be given a makeover by architect Pascale Gomes-McNabb, who's previously worked with them on Bentley, Yellow and the current Monopole.

"It'll be light and airy – bistro by day, wine bar by night," says Savage. "The menu will be a little more classic, with steak frites and a bug roll." Hildebrandt's slick Monopole list will maintain the rage for wines available by the glass.

Monopole will close at Potts Point in September with an October opening set.

The group's flagship Bentley restaurant is already back up and trading, its Barangaroo seafood restaurant, Cirrus, set to follow next month.
