Melbourne University's on-campus food scene scored itself an HD with the recent addition of tasty newcomer Ho Ho's Canteen. The days-only operation has been a healthy shift for family man and talented chef-owner Fabian Calabrese, who trained under mentor Ricardo Momesso at Sarti and had stints at Esposito at Toofey's and Embrasse. Along with fellow former Sarti chef Ollie Coulter, Calabrese scours local markets to churn out seasonal salads, vegetable dishes, baguettes and a rotating choice of pasta dishes, soups and terrines - all done in-house from scratch.
