New restaurant for Golden Century to hero its most famous dish

Everyone from Rihanna to Lady Gaga has made the late-night dash for pipis dressed in XO sauce at Golden Century, so why wouldn't the restaurant's signature dish inspire the name of a spin-off restaurant? When the new restaurant backed by the family behind the Golden Century opens early August in the Kengo Kuma building on the former site of the Entertainment Centre, it'll be named XOPP by Golden Century in honour of the dish US celebrity chef David Chang named the best in the world. "My Dad, Eric, came up with it [the name]. It came out of somewhere, it's a homage to our tradition…It's one of those dishes with wide appeal," says Golden Century scion Billy Wong. "We'll have to put it [the dish] on the menu at XOPP." It is shaping up a big year of change for the Sydney restaurant institution. There's the restaurant in the works, and back at HQ they've just put the finishing touches on a new third floor at the original restaurant built by Schiavello. "It's private dining rooms; eventually there'll be a wine room there as well," Billy Wong tells Good Food.
