When the crew from Potts Point's Fratelli Paradiso undertake spin-off business ventures, they are invariably well considered and unexpected (like the pint-sized 10 William Street in Paddington or opening in Tokyo). And there's another on the way in 2019.

Fratelli co-owner Marco Ambrosino was tight-lipped on the details but confirmed 10 William Street chef Enrico Tomelleri is currently in Europe doing research and development for the new venture.

The talented Tomelleri is tellingly jumping out of the Paddington kitchen next March but will stay with the group. It might be diminutive, but 10 William Street has had a knack for snaring rising talent, with Dan Pepperell, Luke Burgess, Mike Eggert and Jemma Whiteman all having rattled the pans there.

Ambrosino confirmed former Brae chef Trisha Greentree will take the reins from Tomelleri next year. "We've always given great people room to shine and go for it … We've been keen on her for a long time, she has amazing talent."
