The Darlinghurst site where Onde traded for 21 years until late last year has a new operator. Moon Restaurant is trying to pick up where the innovative Onde left off.

Onde was started by talented up-and-comer chef Laif Etournaud, while Moon has ex-Longrain chef Aum Touchpong Chancaw in the kitchen and Jackie Park [ex-Koi Dessert Bar] running front of house.

Where Onde ushered in Sydney's craze for duck confit, selling 250,000 duck legs during its run, Moon is championing duck as well as a "hay-dried" spatchcock dish.

"Aum uses some molecular gastronomy, there's a cured egg caviar on his green curry dish," a spokeswoman says.

The duo is also trying to create a new restaurant model which includes opening a small artists' gallery, currently featuring the works of Sydney artist Blair Zhang.
