Northern Light pair to open Gas-light Izakaya at the Gasometer Hotel

The American-themed dining room at Collingwood band venue and boozer The Gasometer Hotel is turning Japanese.

Chefs Adam Liston and Eamon Bellew, co-owners and operators of Asian den Northern Light further up Smith Street, have bought into the business, joining Clint Fisher and Shan Vanderwert, with plans to remake the dining room into Gas-light Izakaya.

Fresh back from exploring izakayas, katsu and yakitori restaurants in Tokyo, Osaka and Kyoto, Liston and Bellew will have chicken and pork katsu (crumbed and fried) and various yakitori (grilled skewers) on the menu, along with Japanese beers on tap.

The current dining room will close on August 23 and reopen as Gas-light Izakaya on August 27.

Open Monday to Thursday from 5pm, and from noon Friday to Sunday.
