GRK Meze Grill will rise from the ashes of Ble Restaurant on Friday, the hatted restaurant that recently closed its doors in Ramsgate.

With Ble chef Natalia Gaspari departing for Melbourne, where she has plans to find a new home for her lobster and haloumi ravioli and open her own restaurant, Ble owner Arthur Balayannis is rebooting.

Balayannis, who owns GRK Souvlaki in Mascot, will mix a little of its menu with Athens street food and meze. He's also called in Alpha chef Peter Conistis. "I won't be actively involved," Conistis says. "I'm just helping out a mate."

Conistis has created the meze menu, and given the gyros a makeover. When the doors reopen, there'll be a beef brisket version with red wine glaze and a mushroom and root vegetable gyro with a tahini crust.
