Rene Redzepi to relocate Noma to Japan

In what will be the ultimate pop-up, Danish chef Rene Redzepi has announced he is moving the entire staff of his famed Noma restaurant to Tokyo at the beginning of next year.

Announcing the plan on Twitter, Redzepi said Noma would open in the Japanese capital for a two-month stint, although details of exactly where and how have not been revealed.

Japanese foodies will be able to experience the Redzepi approach using their own - rather than Scandinavian - ingredients. Writing on Noma's website, Redzepi said he and his staff would leave their ingredients in Copenhagen for the trip: "Rather we'll bring our mindset and sensibilities to the best of pristine winter produce from all over Japan."

The world-renowned chef, whose restaurant held the title of "world's best" from 2010-2012, explained he's been plotting this particular dream since a trip to the Kyoto restaurant of chef Yoshihiro Murata five years ago.

"I was awestruck by the richness of Japanese food culture. In some way since that first visit I've been secretly planning this temporary relocation." (See story about Kikunoi restaurant.)

Redzepi wrote that more details of the Noma Tokyo pop-up would be revealed in June. "The whole staff is exhilarated, like myself, by this opportunity and we believe that the wealth of knowledge from the journey will enrich our own restaurant and cooking when we return to Copenhagen."
